The stone

The batter is ground on a stone that came with the family in 1978. A machine is faster and the batter is not the same, and we have tested that more than once in front of people who did not believe us.
  • Ground every night, never the night before
  • Fermented for eleven hours, longer in winter
  • Rice and lentils from the same two suppliers
